1 teaspoon salt
8 table spoons warm water
500g curd cheese
Pasta: Mix flour, egg, salt and water and knead until tender. Let dough rest for 20 minutes.
Filling: Mush boiled potatoes and add curds, finely chopped herbs, salt and pepper. Blend carefully.
Roll out the dough and place small balls of filling on one half. Cover with second half of the dough and press carefully. Cut out with a glass or pastry cutter. Make sure that both layers of pasta stick together! Boil in salted water for about 5 minutes. Serve with melted (brown) butter.
