Apple balls in a cider sauce

Ingredients (serves 4):

1 apple
1.5 tbsp sugar
4 tbsp breadcrumbs
1 tbsp ground nuts
2 eggs, cinnamon
125 ml cider, 62 ml cream
6 g butter, 3 g corn starch
500 ml frying oil

Sauté diced apple in butter; add sugar, 2 tbsp breadcrumbs, nuts, cinnamon and 1 egg yolk. Make small balls and coat them with breadcrumbs, beaten egg and breadcrumbs again. Fry the balls in oil until golden brown.

For the sauce bring cider and sugar to a boil and add cornstarch. Later add whipping cream.

Garnish with sour cream.
